Mais Poh has made some Sujee Biscuits with almond meal and it’s got her thinking about experimenting with almonds in other recipes. She visits a heritage almond grower and tastes some heritage almonds but is entranced by finding out about green almonds and takes a bag of them back to her kitchen to experiment with. French chef Emmanuel Mollois is her guest and shows her the best way to cook salmon and accompanies it with Almond Milk, a recipe he’s adapted from an old 14th century French recipe book. Poh cooks recipes using all kinds of almonds and even impresses Emmanuel with an exotic almond cocktail.
